Cauliflower Cheese
Juliet came to lunch today and asked for this recipe. I explained that we got taught how to make white saucet at school and then proceeded to make 101 receipes with it (the curried sauce was the worst). Here is how I make caluiflower cheese.
Ingredients
Caulflower (whole - if making a half then half the rest of the ingredients)
2T butter
2T flour
2c milk
1c cheese
2 slices of white bread
Another nob of butter
Method
- Preheat oven to 180c.
- Cut the cauliflower into florets. Place in a microwave proof container and add 1/4c water. Cover with gladwrap or a lid and microwave until cooked (I still like it a bit firm, but you can give it a poke with a fork).
- To make the white sauce melt the butter in a pot over a medium heat. Add the flour to make a paste and cook for 1 minute on low/medium. Then slowly add the milk whisking as you go. When all added keep stirring until it comes to a slow boil. Cook for 2 minutes. Turn off and season with salt and pepper and add 3/4 of the cheese.
- To make the crumb place the slices of bread in the food processer. Blend until crumbs. Add a know of butter and the rest of the cheese.
- To assemble place the caulflower in an ovenproof dish. Pour cheese sauce over and top with crumb mix. Bake for 25 minutes.
